MICHELIN magic is heading to London. The celebrated chef Akira Back has brought his MICHELIN-starred concept, DOSA, to Mandarin Oriental Mayfair. Located in Hanover Square, DOSA will make its London debut on 18 September, and here’s what to expect. 

DOSA will showcase Chef Akira Back’s take on Korean and Japanese food. The eight-course menu will change regularly and draw inspiration from Korean traditions and cooking techniques. Dishes could include AB Tuna Pizza; Dynamite Lobster with pickled shimeji; Mulhoe’s chilled soup with wild pink seabream, donchimi, red pepper, salsify and wasabi sorbet; and Majangdong with three cuts of beef turned into Yukhoe bibimbap. 

DOSA

Chef Jihun Kim will be at the helm of DOSA. He previously worked at the first DOSA, which opened in Seoul. The London venue will be an intimate space with 14 counter-top seats. Plus, the design will boast an industrial chic feel with dark, dimly lit features and an open kitchen.  

Akira Back hails from Seoul in Korea and had an unusual route into the restaurant industry. When he was 15 years old, he started snowboarding and competed professionally. He later studied at the International Culinary School at The Institute of Colorado and went on to work in Aspen, Texas and Hawaii.

DOSA

Today, he has restaurants across the globe including Dubai, Las Vegas, Marrakech, Riyadh and Singapore. In 2018, he was awarded a MICHELIN Star for his restaurant DOSA in Seoul. Akira oversees all of Mandarin Oriental Mayfair’s restaurants and bars. The hotel’s food and drink venues include Akira Back, DOSA, ABar Lounge and ABar Rooftop. Akira Back’s signature restaurant is Akira Back, which brings together Japanese and Korean food, it showcases the chef’s greatest culinary hits.
