The restaurant will feature a large, open-fire grill at its centre.

Chef Yiannis Mexis will be making his solo debut with his new Greek restaurant PYRO. The upcoming restaurant will be located in Borough Market and is due to open on 25 April.

Previously at Elystan Street, The Ledbury, Petrus and more recently head chef at HIDE, Yiannis is bringing diverse flavours from his homeland to London with PYRO. Labelled as a restaurant that focuses on ‘open fire cooking with Greek soul’, PYRO aims to provide the bustling atmosphere of a Greek taverna with a reinvented and refined twist to traditional Greek dishes.

The menu will source its flavours from a combination of British producers and Greek farmers,  offering both small plates and sharing dishes. These will include: spanakopita with fragrant herbs and barrel-aged feta, mussel saganaki with toasted bread and vine leaf, embered souvlaki skewer with radicchio and sour apple, barbecued octopus in spiced red wine with yellow split pea and for dessert, portokalopita with citrus leaf ice cream and orange liquor.

PYRO will further include a large bar and outdoor terrace, with cocktails from Ana Reznik (previously at A Bar with Shapes for a Name), whose drinks menu will include Greek flavours such as olive oil, mastic and ouzo. In the true Greek spirit, they will also host a Greek Sunday Feast over the weekend.

Last month, Yiannis finished a two-week residency at Carousel in London, where he gave customers a preview of what’s to come at PYRO.

PYRO’s ethos aims to be a ‘celebration of cooking over fire’, and since Yiannis was ‘raised between Athens and Mykonos, surrounded by family feasts and the scent of open fire cooking filling the streets’, it most likely will live up to its philosophy.

Their website says: ‘Introducing the much-anticipated Pyro by Yiannis Mexis. A fusion of Greek soul, Michelin-level finesse and the art of open-fire cooking. A menu to be shared, using the best in-season produce.’

PYRO is set to bring a fresh take on Greek cooking to London, blending open-fire flavours with warm hospitality. With its May opening around the corner, it’s shaping up to be one of the city’s most exciting new restaurants.
